So I decided to try making a up to date Office 2007 installer, and I've done it.

There are a few things to note:
  1. There are 4 updates not integrated, they must be installed separately. One is a security update for Outlook, and the three others are for installing and updating the File Validation Add-in. The two updates for the add-in are considered Office 2010 updates, so don't be alarmed by this.
  2. I was unable to get Office Communicator and potentially others to show up in the installer, so I was unable to get updates for the item(s). If you know how to install the item(s) or find an ISO with the missing item(s), I will thank you, and make a v2 ISO with the missing updates added.
  3. If you don't need/like Windows help, you can safely delete kb963662, kb963663, kb963665, kb963667, kb963669, kb963670, kb963671, kb963673, kb963677, and kb963678 from the updates folder. These add help items for the various Office 2007 programs, and can be removed to make the install slightly faster.
  4. You can install any Office 2007 ISO without a product key, if you click continue without entering the key, it'll let you through.

If you want to burn Office 2007 to a disc, or make an ISO, I recommend you grab a copy of Imgburn, and use that to create an ISO. It's a pretty simple process. I didn't do this so I could better compress the installer, as with the updates it gets quite big.
